The New MEBAK Volume “Wort, Beer and Beer-based Beverages”

In this latest edition, MEBAK has combined all of the analysis methods from their previous collections relating to Wort, Beer and Beer-based Beverages into a new, single volume. This collection of analysis methods thereby complements the two volumes previously published in this series, Water and Raw Materials as well as Gebinde und Produktausstattungsmittel (Containers and Packaging Materials – available in German). The topics sensory analysis and microbiology will each appear in separate, more in-depth volumes.

This volume encompasses the content previously contained in the MEBAK Volumes II and III. The content has been thoroughly updated and expanded, and the latest special analysis methods have been integrated into this collection.

Emphasis has been placed on the analysis methods with reference to monitoring brewhouse operations, which form the foundation for brewhouse inspection and assessment. The topics of wort and beer cover not only the standard analysis methods but also methods, which are becoming more common with increasing laboratory automation. All current methods for measuring CO2 and O2 as well as those for evaluating foam have been incorporated in this volume. New to this collection are methods of nutritional analysis, a subject rapidly gaining in significance, which includes the latest changes in legal requirements concerning nutrition and details concerning the “big four” and the “big eight”. For evaluating the reduction potential, new methods have also been included, such as determination by means of chemiluminescence and ESR spectroscopy.

Due to the increasing importance of beer-based beverages for breweries, they have been covered comprehensively and therefore weigh prominently in this volume. Alongside the familiar procedures for enzymatic analysis, there are numerous new HPLC methods that are by now employed in most laboratories.

This collection of analysis methods encompasses approximately 600 pages and can be regarded as the standard work for brewing and beverage analysis. This new MEBAK volume serves not only as an educational tool for students but also as the basis for routine quality monitoring and decisions concerning quality control in breweries, packaging facilities and allied suppliers.
