Unique process for the dealcoholization of wheat beer
Before long, at Private Weissbierbrauerei G. Schneider & Sohn in Kelheim the new beer dealcoholization plant will be commissioned. It is a completely piped compact plant for the expansion of the wheat beer production. The plant operates according to the process developed by GEA Wiegand in the late 80s on the basis of the falling-film evaporator principle, and it is the only known process without recirculation or re-dilution and without rotating distribution system. These unique characteristics are responsible for extremely short residence times and tight distribution of residence time during production and for short cleaning cycles of the plant.
The extension is performed by GEA Tuchenhagen and GEA Wiegand. GEA Tuchenhagen delivers the Ecomatrix valve trees for the pressure tanks, fully automatic tank top fittings and gas fittings, the CIP connection to the periphery and the complete control system. Special emphasis has to be put on the Hygienic Design, starting with the room design to the design of the pipes up to the construction of machines and plants.
The beer dealcoholization is realized in the course of the complete expansion at Scheider Weisse. The quality consciousness of the family brewery has to be accentuated. The beer is completely produced in bottle fermentation process, pasteurization or other thermal preservation processes are not used wittingly, so that it is always a natural product fulfilling even highest demands. This is completely in line with the philosophy of Schneider.
