Beer as a beverage has to have a series of characteristics so as to be regarded as nutritive and enjoyable; in quality, it has to meet consumer expectations e.g. in terms of taste, colour, stability and head retention.
Malt is made from barley which differs very considerably in its biochemical composition depending on year and growing region. This predetermines that certain substances will start out having differing initial values. Pre-treatment of barley during malting/kilning also plays a role.
As beer quality from a brewery for any particular beer type is expected always to remain the same, tests are necessary to help achieve the specified ultimate analysis despite changes in malt starting values. Additionally, the experience of brewing technicians can also make a contribution.
