Here is Prof Bamforth’s abstract:

“The overriding principle that has governed my research in more than forty years in the UK and US has been that every project had to have an outcome that had potential value through application within the malting, brewing or associated industries. Primarily I have stayed loyal to my discipline as a biochemist (even more accurately, enzymologist), although I have drifted from time to time! Areas of investigation have included the structure of the cell walls of the barley endosperm and the mode of their degradation; the physics and chemistry of achieving excellent foam stability; the critical control points for ensuring the flavour stability of beer; the control of dimethyl sulphide levels in beer; the healthfulness of beer. In this presentation, I will summarise these studies, with an eye to the future.”

Dr Bamforth retired in December 2018 as Distinguished Professor in the Department of Food Science & Technology at UC Davis. He has been a member of the brewing industry since 1978 and was formerly in senior roles with Brewing Research International (formerly BRF and BRFI) and Bass Brewers. He is an Honorary Professor in the School of Biosciences at the University of Nottingham and was formerly Visiting Professor at Heriot-Watt University. He has published more than 300 papers and articles and has written or edited more than 20 books. He has written even more prolifically on soccer since 1985.

He was awarded the Cambridge Prize of the Institute of Brewing in 1984 and received the Horace Brown Medal from the IBD in 2018. He is a past president of the IBD and a past chair of the International section.

In 2011, Prof Bamforth was honoured with the Award of Distinction by the American Society of Brewing Chemists and was presented with the Award of Honour by the Master Brewers Association of the Americas in 2018. In the same year he received the Recognition Award from the Brewers Association.

Further, in 2018, he was presented with the Award of Distinction by the College of Agricultural and Environmental Sciences at UC Davis. In 2015, Prof Bamforth received an honorary doctorate from Heriot-Watt University.
