His book covers all aspects of brewing and packaging, ranging from raw materials, wort and beer production, including the microbiological processes involved, to sanitation and quality control.
A significant section is devoted to plant and machinery which are needed when setting up a brewery. As his is a manual aimed at the Italian market, Dr Gresser has included chapters which deal with Italy’s rules and requirements as concerns the production, the control and the marketing of beers.
